I originally got this from the big man’s world blog. I added butterscotch bc I’ve been missing some scootcharoos. Which I did eventually find a recipe to keto scootcharoos.

Butterscotch Keto Peanut Butter Balls

Course Snack


  • 2 Cups Peanut Butter
  • 1 tsp Butterscotch Extract
  • 1/2 tsp vanilla extract
  • 3/4 Cup Coconut
  • 1/2 Cup Lakanto Monk Fruit Maple Syrup
  • 1 cup Sugar Free Chocolate for dipping


Mix your PB, Coconut flour and Lakanto Monk Fruit maple syrup and the extracts and freeze for 10 minutes. Then melt your chocolate and dip in chocolate with a fork. Put the balls back in the fridge to allow them to harden.
